Cooking Instructions
Season generously and sear over high heat, then roast until internal temperature reaches:
- Rare: 125°F (52°C)
- Medium-rare: 135°F (57°C)
- Medium: 145°F (63°C)
Rest for 10 minutes before slicing against the grain. Grass-fed beef cooks faster than grain-fed — pull it a few degrees early and check often.
