Why the Ribeye
The ribeye comes from the longissimus dorsi — the muscle that runs along the spine, between the chuck and the loin, doing almost no work during the animal's life. That inactivity means exceptional tenderness. The intramuscular fat that runs through the muscle in fine white lines (the marbling) renders during cooking, continuously basting the meat from the inside and producing the juicy, rich, deeply flavourful result that makes the ribeye the most popular steak cut in Canada. Grain-finishing for maximum marbling on RWA Canadian Angus produces the balance between grass-fed flavour and grain-built richness that makes this version of the ribeye distinct.
How to Cook RWA Ribeye Steaks
Grill or cast iron (recommended): Pat dry. Season generously with kosher salt and cracked pepper. High direct heat. 60/40 method — first side 60% of total cook time, flip and finish for 40%. Lid down, tongs only. Target medium-rare at 130–135°F (54–57°C). Rest 5 minutes minimum.

Serve: Rest 5 minutes. Kosher salt over iodized — coarser grain, cleaner flavour. A knob of compound butter (herb, garlic, or blue cheese) melted over the steak at the table is the classic finishing move.
