The Steaks

Preheat grill to high. Pat dry, season generously. 60/40 method — first side 60% of total cook time, flip and finish for 40%. Lid down, tongs only. Target medium-rare at 130–135°F (54–57°C). Rest 5 minutes.

Certified Organic beef patties — grind from premium Canadian Angus, Ecocert and Pro-Cert verified. Form them yourself or use them as-is. High heat, 3–4 minutes per side to 160°F (71°C) internal. Don't press — pressing pushes the fat and juice you want into the grill. Rest 2 minutes before building.
