It's a natural source of nitrites that replaces synthetic sodium nitrite, the same approach used across every Beretta hot dog and charcuterie product. The dehydrated cherry juice is worth noting specifically: it's a natural colour-retention agent that keeps the hot dog's pink colour without synthetic sodium erythorbate or artificial dyes. The pea protein supports the bind in the absence of the fillers conventional hot dogs rely on. How to Cook

Grill: Medium-high direct heat, turning every 2 minutes for 5–7 minutes until the casing is blistered and lightly charred. The leaner bison profile means less fat rendering than a beef hot dog — watch the heat and don't walk away.

Pan: Medium-high heat in a lightly oiled pan, 3–4 minutes per side until deeply browned on two sides.

Boiled (from frozen): Bring water to a simmer, add dogs, cook 4–5 minutes until heated through. The casing won't develop colour this way — finish 60 seconds in a hot pan or under a broiler if colour matters.

Serve: In a toasted bun with grain mustard and sauerkraut for the classic pairing. The bison's mineral character holds up particularly well against bold condiments — pickled jalapeños, kimchi, sharp cheddar — that would overpower a milder beef dog.
