Whole Beef Brisket: Certified Organic
Our Beef Brisket is the king of slow cooking! Although this cut of meat is rather tough by nature, that toughness can be counteracted by cooking it long and slow. This method breaks down the large quantity of connective tissue and transforms it into a rich and tender finished product. Perfect on the BBQ, in the smoker or in the oven, our Brisket is perfect all year round!
Brisket Recipe
- 1 Whole Beretta Beef Brisket
- Kosher Salt
- Freshly Ground Pepper
- 6 Tablespoons Olive oil
- 4 Tablespoons Butter
- 3 yellow onions, thinly sliced
- 4 garlic Cloves, thinly sliced
- 4 celery stalks cut into long thin pieces
- 15-20 sprigs of fresh thyme
- 2 cups of your favourite red wine
- 4 cups Beretta Beef Stock
- 2 jars Beretta original BBQ sauce (500 ml)
Oven at 350
Cooking time 4-5 hours
Prepare the brisket by patting the brisket dry with paper towels and then season with salt and pepper. In a large pan heat 4 Tbsp’s olive oil and all the butter over medium to high heat. Add the brisket and sear turning once for 3-4 minutes per side, until lightly browned on each side. Transfer the whole brisket to a plate until a bit later.
Add the remaining oil to the pan and reduce heat to medium low. Add the onions, garlic and celery to the pan, stirring often for about 3-5 minutes until veggies begin to brown. Add the wine and stock to the pan, bring to a boil then return the brisket to the pan, cover and bake for 3-4 hours, until fork tender.
Remove the brisket from the oven, keep covered. Heat the BBQ sauce. Remove the brisket from the pan, thinly slice the brisket and arrange on serving platter, pour heated BBQ sauce over the brisket and serve.
This is delicious served with buttermilk, mashed potatoes and cabbage cold slaw!
