Why Bison Over Beef for a Burger

Bison burgers have two advantages over beef. First, leanness: bison is naturally lower in fat than beef, which means a bison burger delivers more protein per ounce with less fat — 18g protein and 16g fat per 100g versus a typical 80/20 beef patty at roughly 17g protein and 20g fat. Second, flavour character: bison has a clean, mineral, slightly earthy flavour that comes through clearly in a burger — more distinctive than beef, without being gamey. For the buyer who finds beef burgers too rich or too heavy, bison is the answer.

Three Ingredients — What That Means

Most commercial burger patties include fillers (breadcrumbs, soy protein), binders (egg, starches), and preservatives. Some add flavour enhancers. Beretta's bison patties contain nothing that isn't already in the bison. Salt seasons. Pepper finishes. The bison does the rest. The result is a patty that tastes like the animal it came from.

How to Cook Bison Burgers

The key difference from beef: bison is leaner, which means it cooks approximately 30% faster and has less tolerance for overcooking. A well-done bison burger is dry. A medium bison burger is excellent.

Grill: High direct heat. 3–4 minutes per side for medium (160°F / 71°C internal). Do not press — pressing forces out the fat and moisture bison has less of to spare. Flip once. Rest 2 minutes before building.

Pan: Medium-high heat in a lightly oiled cast iron. 3–4 minutes per side to 160°F (71°C). The lean patty will not render much fat into the pan — that's expected.
