Ingredients & Instructions

1 lb Beretta Farms stewing beef
2 tbsp Beretta Beef Tallow
1 large onion, chopped
2 cloves garlic, minced
4 medium potatoes, diced
3 carrots, chopped
2 celery stalks, chopped
4 cups beef broth
1 cup red wine (optional)
2 bay leaves
1 tsp thyme and rosemary
Salt and pepper to taste
Fresh parsley for garnish

Tallow is a rendered form of beef or bison fat surrounding the animals’ organs. 

 

The fat is called leaf fat, hard fat, or more commonly suet. 

 

Rendered suet (tallow) is different from muscular fat.

 

 It has a different taste, consistency, contains different kinds of fats. 

 

Suet has higher melting and smoke points, and keeps safe at room temperature for longer. 

 

The rendering process involves slowly boiling the fat and spinning it in a centrifuge at high speed, which separates any liquids or connective tissues. 

 

Our tallow  is then poured in jars and ready when it is solidified at room temperature.

Let's Get Cooking

1. Brown the Beef

 

Heat Beef Tallow in a large pot. Brown the stewing beef in batches, then set aside.


2. Sauté Veggies

 

In the same pot, sauté onion and garlic for 2-3 minutes.

 

3. Simmer

 

Add the beef back with potatoes, carrots, celery, broth, wine, bay leaves, thyme, and rosemary. Bring to a boil, then simmer on low for 1.5-2 hours, until beef is tender.

 

5. Serve


Remove bay leaves and garnish with parsley.
