Two Uses, One Product

Stewing and braising: The primary application. Cube-cut beef from working muscles — chuck, round, or similar — contains the connective tissue and collagen that low-and-slow cooking transforms into gelatin and body. The longer it cooks, the more flavour it releases into the liquid and the more tender the meat becomes. Boeuf Bourguignon, beef stew, beef daube, tagine, Irish stew, short rib chili — any braise that calls for 1.5–3 hours of cooking benefits from quality stewing beef, and the RWA Canadian Angus base here makes a meaningful difference to the depth of the final dish.

Kabobs and skewers: The same cubes that braise beautifully also thread onto a skewer and cook quickly over high heat — a completely different technique, same protein. For kabobs, marinate for 2–4 hours in olive oil, garlic, lemon, and herbs, then grill over high direct heat for 8–12 minutes, turning every 2–3 minutes. The lean cut holds its shape on the skewer without falling apart.

How to Braise

The key technique: sear before you stew. Pat the cubes completely dry, season generously, and brown in batches in a hot, lightly oiled pan — do not crowd the pan or the beef will steam rather than sear. A proper brown crust on the exterior develops the Maillard reaction flavour compounds that give a braised dish its depth. Once browned, deglaze the pan and build your liquid over the fond. Then cook low and slow: 160–180°F (71–82°C) for 1.5–3 hours in a covered pot or Dutch oven until the beef is fork-tender.

Use Beretta beef stock as the base liquid for the deepest, most flavourful result.
