The Flavour Profile
The foundation is ketchup and apple cider, sweetened with brown sugar and maple sugar — the maple is real maple sugar, not flavouring. Chipotle paste brings a moderate, smoky heat that builds rather than hits immediately. The worcestershire layer adds depth and umami. And then there's the spice blend: smoked paprika, chili powder, sweet paprika, onion powder, cumin, coriander, celery salt, ginger, dry mustard, oregano, fennel seed, and caraway seed. As a Marinade
