How to 'Master Your Picanha'
Prepping
- When removing meat from packaging, pat dry with paper towels to remove extra moisture
- Skewer the picanha with two metal skewers to secure each steak
- Shape steaks into a C-curve with the fat cap on the outside
- Season generously with coarse sea salt or kosher salt on all sides
- Meat should be brought to room temperature before cooking for optimum results
Grilling
- Preheat charcoal grill to 500+ degrees F using 2-zone setup
- Place skewers between hot and cool zones for indirect heat control
- Flip every 2 minutes to recreate rotisserie-style cooking
- Cook for 15-20 minutes to 130°F internal temperature for medium rare
- Use tongs, never a fork as it will puncture the meat and release juices
Serving
- Allow steaks to 'rest' for 5 minutes before slicing
