How to Thaw, Cook & Store Your Striploin Steaks
Thawing
- Refrigerator (recommended): Place vacuum-sealed steaks in the fridge 24–36 hours before cooking. Keep them in the original packaging to retain moisture.
- Quick thaw: Submerge sealed package in cold water for 60–90 minutes, changing the water every 30 minutes.
- Do not thaw at room temperature.
On the Grill
- Preheat to high (230–260°C / 450–500°F). Pat steaks dry and season generously with salt and pepper.
- Grill 3–4 minutes per side for medium-rare (54°C / 130°F internal). Adjust by 1 minute per side for medium.
- Grass-fed beef cooks 20–30% faster than grain-fed — use an instant-read thermometer and pull slightly early to account for carry-over heat.
In a Cast Iron Pan
- Heat pan over high heat until smoking. Add a high smoke-point oil (avocado or grapeseed).
- Sear 3–4 minutes per side, basting with butter, garlic, and fresh thyme in the final minute.
- Target 54°C (130°F) for medium-rare.
Resting & Serving
- Rest steaks on a warm plate, loosely tented with foil, for 5 minutes before slicing. This lets the juices redistribute for maximum flavour.
- Slice against the grain. Each 8 oz steak serves 1–2 as a main.
Storage
- Keep frozen until ready to use. Once thawed, consume within 2–3 days and store refrigerated.
- Do not refreeze after thawing.
