Grilled: Medium-high heat, oil the grates well. Skin-side down for 4–5 minutes, flip and finish 2–3 minutes to 145°F (63°C). The skin protects the flesh from the grates and peels away cleanly after cooking.
Air Fryer: 400°F (205°C) for 8–10 minutes, skin-side down. Flesh stays moist; skin won't crisp as well as a hot pan.
