The Truth About Frozen Meat: What Actually Determines Quality

Frozen meat has a reputation problem it doesn’t really deserve. The word "frozen" often makes people assume that all frozen meat is the same. It isn’t. The quality of frozen meat comes down to a few specific things: when it was frozen, how it was frozen, and what happened to it before it ever got there. Understanding those factors is a better way to think about frozen meat than any blanket assumption about the freezer aisle. 

Timing Is The Real Variable

Meat needs time to age before it’s at its best. Aging is what allows natural enzymes to break down connective tissue and develop the tenderness and flavour a good cut is known for. That process has a window, and once it’s complete, the quality doesn’t hold steady forever. It starts to decline the longer the meat sits afterward, in a warehouse, or in storage. 

 

Freezing pauses that clock, but only at whatever point it happens. Meat frozen right at peak quality stays at that peak until it’s thawed. Meat that’s frozen well past that point, after days of decline, doesn’t get a second chance, the freezer preserves whatever state the meat was already in, for better or worse. That’s why two products can both be labelled “frozen” and still be very different products: one was locked in at its best moment, the other was frozen late, to extend the life of something already past its prime. 

How It's Frozen Matters Too 

Freezing speed changes the outcome as well. Rapid, professional freezing forms much smaller ice crystals inside the meat than the slower freezing a home freezer produces. Smaller ice crystals cause far less damage to muscle fibers, which is a big part of why properly flash-frozen meat holds onto more of its natural moisture and once thawed. Slow freezing does more damage on the way in, and that damage doesn’t reverse on the way out. 

Does Freezing Meat Cost You Nutrients? 

Well actually, the opposite is often argued, in fact freezing itself doesn't destroy nutrients. There's very little measurable change in the nutrient content of meat and poultry during frozen storage. The nutrients you get from a properly frozen product are close to what you'd get from the same cut eaten fresh at its peak. 

 

Freezing also doesn't stop enzyme activity entirely; it simply slows the process. In meat and fish, the remaining enzyme activity has a limited effect on quality during frozen storage, unlike in delicate foods such as leafy vegetables, where texture and structure can break down more noticeably after freezing. 

 

How This Plays Out With Beretta Steaks 

Our steaks follow a deliberate two-stage process built around timing, not shortcuts. First, they're aged for 21 days. That window is what allows natural enzymes to break down connective tissue and concentrate flavour, giving the steak the tenderness and depth you'd expect from a properly aged cut. This isn't a step we rush or skip; 21 days is the point where the meat has developed the qualities, we want it to have before it goes anywhere near a freezer. 

 

Once that aging period is complete, the steaks are frozen at that exact peak. Freezing locks in the steak's texture, flavour, and nutrient profile right at its best moment. The clock effectively stops there. When you thaw a Beretta steak at home you're thawing a steak that was frozen at it's peak. 

 

This is also why the freezing step matters just as much as the aging step. A cut that's been aged perfectly but frozen carelessly, or frozen too late, won't deliver the same result. Getting both parts right, the aging and the timing of the freeze, is what separates our steaks from the rest. 

 

Freezer FAQs

Does freezing affect cooking time? 

Only if you're cooking from frozen. Thawed meat cooks the same as any other cut. If you skip the thaw, expect to add extra time and use a lower, more even heat so the outside doesn't overcook before the inside catches up 

 

Is freezer burn the same as poor freezing? 

Not quite. Freezer burn is a storage issue, usually caused by air exposure over a long stretch of time, not the freezing method itself. Well-wrapped meat, frozen properly, can go a long time without it. It's a sign of how the meat was stored after freezing, not evidence that freezing itself was a bad idea. 

 

Does thawing and refreezing ruin meat? 

It doesn't help. Each thaw allows some moisture loss and creates another opportunity for new ice crystals to form when it refreezes, which adds up in texture loss over multiple cycles. One clean thaw for cooking is fine, repeated cycles are what to avoid.
