In 1994, in a tiny apartment kitchen, Andrea combined organic wheat flour and water with organic grapes (a naturally yeast- rich ingredient) to “start” the process of fermentation known as “sourdough.” Unlike commercial yeasts, a “sourdough starter” contains the active wild yeasts that slow down the process of bread making and give our bread its unique characteristics. Andrea then developed our recipes in the tradition of the wonderful “levain” breads of rural France.
Our sourdough breads are mixed gently, allowed to age and ripen at lower temperatures, over longer periods of time than most for some varieties that means up to a whole day. Human hands form and care for this bread. It is baked in ovens lined with hearth stones. This extra time and care combine to ensure the nature and high quality of each loaf of our bread.
