Class is in Session with Cynthia Beretta

The summer came and flew by. I was just getting used to having all the chicklets home and all of a sudden it was August. Now all kids are starting school and here we are. Instead of packing my kids lunches, it’s my lunch I have to now worry about.

The best thing about bringing your own lunch is having complete control over what you eat. It is easy to get distracted and jump in your car to drive to the nearest drive thru. Before that craving even starts, take the time to prep your lunch the night before so you don’t feel rushed in the morning.

First step is to get rid of the brown bag. Adult bento boxes are not only fashionable but easy to compartmentalize. You can have your snack, main and dessert all ready to go and easy to transport.

Now, to actually pack a lunch you look forward to, that’s the easy part. Here are a few of my fresh ideas that will have your lunch packed with flavour.

Option 1:

Main: Marinated flank steak with caramelized onion wrap with a roasted garlic aioli, lettuce and tomato.
Side: Arugula salad with sesame and pumpkin seeds with a light mustard dressing.
Snack: Beretta Farms Protein Puck
Snack: Assorted veggies with homemade hummus.

Option 2:

Main: Beretta salami, basil pesto aioli, tomato, arugula provolone and caramelized onions on a fresh bun.
Snack: Assorted fruit – kiwi, strawberries and grapes.
Snack: A handful of Beretta beef jerky.

Option 3:

Main: Portobello Pizza with chives, diced tomato, goat cheese or fresh mozzarella, extra virgin olive oil and shredded Beretta chicken.
Side: Guacamole deviled eggs.
Snack: Sliced Beretta salami caprese bites with basil and olive oil.

These are great options to get you started. The secret to having a lunch you are excited to eat is having variety. Now get prepping!

Buon Appetito!
